Ros comes from a Hindi word for “gravy” and it contains a lovely combination of a sweet creamy taste from the coconut and a biting spice flavor from the chili. And, to satisfy your craving and curiosity, we will show you how to cook this Goa-native cuisine at the comfort of your own home.
Preparing the ros
To make ros, you will need coconut oil and paste, coarsely chopped onion (preferably the yellow one) and tomato, ginger paste, ground turmeric, Kashmiri (red chile powder works as well), garam masala, and kosher salt.
Using a pan that is previously swirled with coconut oil, sautee the onion for 5 minutes, followed by the other ingredients. Stir regularly until the tomato breaks down. After that, add coconut paste and garam masala and stir again until well mixed.
Making the omelet
You can choose any omelet recipe you want here. But, to add a little bit of spicey taste, you can incorporate chile powder into the egg mixture. Once the omelet is done, all you have to do is serve it on a plate, add one or two spoons of the ros gravy, and enjoy it!
